When the weather is cold I want to forget where I am. I dream of being in a warm place, somewhere where I don’t have two jumpers and a cardigan on. I want the food I eat to reflect that too. These Moroccan lamb meatballs do the job for me. What’s more they’re super easy to make and as I tend to pop them in the slow cooker for most of the day, I can relax, not panic about dinner and generally try and imagine that I’m in a souk or on a Moroccan beach and close my eyes to the weather outside.
Moroccan Lamb Meatballs – Feeds two adults and one small person
Ingredients:
1 pack lamb mince
1 red onion
1 red pepper
1 tin of chopped tomatoes
Dried coriander, cumin and parsley
Cous cous
To make:
Using your hands, make the mince into small bite sized balls. Chop the red onion and pepper. Fry all three in a frying pan, turning the meatballs carefully so they don’t fall apart. You could do the rest of this in your frying pan if you are in a hurry but as I know dinner time is manic o’clock round here I like to put mine into a slow cooker on a slow setting so I know that dinner is taken care of. Add the tin of chopped tomatoes and a good shake of each of the three dried herbs. Serve with cous cous and dreams of warmer climates.
